How to stay connected to the internet

Question specific for combination Karoo 2 and iPhone 12 Pro Max. As I understand so far, there are three types of connections that the Karoo 2 can have.
1) The 'pairing' connection with the iPhone. This is used for notifications and allerts.
2) A WiFi connection with whatever hotspot or access point.
3) Internet connection through Cellular Data
What I want is a lasting connection between my Karoo 2 and the internet. For up/downloading information, effective use of Live Tracking, etc.
There is no internet connection over the 'paired' connection (option 1), right? I wonder why there is not, but it looks like there just isn't.
Internet over WiFi, by creating a hotspot connection with my iPhone, does work, but only for a limited amount of time. Because of security limitations on the iPhone, this will only work when staying active on the hotspot settings page on the iPhone. Enabling hotspot connection in the controlpanel will only work for a short time.
This hotspot connection will stay open when a device is connected with the same AppleID as is used on the iPhone. But I don't know how to do this on the Karoo 2.
The third option, using a SIM for Cellular Data seems a bit very much old school in a connected world that we live in curently. I would have to pay for an extra mobile account, which seems weird because I already have one on my iPhone.
Best option would be making internet available over the paired connection. Or otherwise, make iPhone think Karoo 2 is connected with the same AppleID.

I have exactly the same problem. My two year old Wahoo ROAM could use my phone's internet on the go. For this he did not even use the WIFI hotspot, but only the existing Bluetooth connection. Would be nice if the Karoo2 could also at some point.
I miss this function painfully. Especially when I finish my tour at the front door, it is not automatically loaded to Strava and Trainingspeak, because I am not yet in the range of my home network.
