  Did you load th APK, maybe from here and send it to the Karoo?

  From what I’ve seen in the Karoo community, sideloading media apps like Apple Music is hit-or-miss. Spotify has limited support, but Apple streaming Music depends heavily on services that Karoo OS doesn’t fully support yet.
