Is there a way to get to the settings menu when recording a ride?

  Yes. When in the ride app - recording a ride - you have to press and hold down button D (bottom right) until you see the home page appear. From here you can open the Settings app, or whatever other app you want.

  Then press button D again to return to your ride.
