Did you perform a Factory Data Reset after upgrading?

    https://support.hammerhead.io/hc/en-us/articles/360058853573-Performing-a-Hard-Reset-on-your-Karoo-2

I find this helps eradicate a lot of issues like this and probably worth doing after every update. It's not an especially onerous process since most of your configuration data will be synced to the cloud anyway. I think you will need to re-pair your phone and any sensors, though.

Please note the following (from the Release Notes):

[KAROO 2 ONLY] FACTORY RESET CHANGES

We’ve changed Factory Reset to force Karoo 2 to forget any paired smartphone. You will now have to repair your phone to Karoo 2 after a Factory Reset, which requires “forgetting” Karoo 2 from your phone first.

Thank you, I’ve made a factory reset, and reconnect my devices, and now it works, thanks.

This issue persists on the current build.  The error occurs when you attempt to pair BT Audio to a phone instead of BT headphones, i.e. attempting to use the Karoo 2 as a BT audio speaker rather than source.  I paired my Karoo 2 BT Audio with my iPhone 8, and was then unable to access the BT Audio sub-menu.  I then performed a factory reset and was able to successfully pair my Karoo 2 BT Audio with a pair of headphones.

My experience is similar.. BT headset pairing works fine.  BT phone pairing causes the app to crash and only a factory reset fixes the issues.
